These are the biscuits I make on Sunday afternoons when I know the week ahead is going to move fast. They reheat beautifully, Lucas actually eats them, and they hit the protein and veggies I want my family starting the day with — without me having to think about it at 6:45 a.m.
The recipe started life over at Jenn Eats Goood, and her cheddar chive version is genuinely the best high-protein biscuit recipe I've found online. Mine is just an everyday adaptation — I swap the chives for finely chopped broccoli (a sneaky win for the toddler), use breakfast sausage instead of plain ground chicken, add a splash of buttermilk for tenderness, and trade the almond and coconut flours for a mix of ground flax, whole wheat, and all-purpose. A Few Notes Before You Start
The broccoli needs to be chopped finely — think small enough to disappear into the dough. I pulse mine a few times in the food processor. I don't bother sautéing it anymore; it gets folded in raw at the very end and cooks through in the oven, which keeps that fresh green color and one less pan to wash.
I make my own breakfast sausage so I know exactly what's in it — a quick mix of ground meat, salt, pepper, thyme, garlic powder, smoked paprika, sage, nutmeg, and a touch of maple syrup or coconut sugar. A 1:2 ratio of pork to turkey gives the most balanced fat content, but ground chicken works too. The full sausage recipe is in the card below, and a pound of good store-bought breakfast sausage is a perfectly fine shortcut. Either way, the rest of the seasonings get whisked right into the dry ingredients rather than added to the pan.
The optional scoops of collagen are easy to hide in here without changing the texture. I use Perfect Supplements hydrolyzed collagen — the same one on my essentials page. Skip it if you don't have it on hand; the biscuits work either way.
Broccoli Cheddar Sausage Breakfast Biscuits

Ingredients
- For the Breakfast Sausage (makes ~1 lb — or use 1 lb store-bought)
- 1 lb ground chicken, pork, or turkey (a 1:2 ratio of pork to turkey gives a nicely balanced fat content)
- 1½ tsp salt
- ¾ tsp black pepper
- 1 tsp thyme
- 2 tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp sage
- ¼ tsp nutmeg
- 1–2 tbsp maple syrup or coconut sugar (to taste)
- Wet Ingredients
- 6 large eggs
- 1½ tbsp buttermilk
- 1 cup cottage cheese
- Dry Ingredients
- 1½ cups all-purpose flour
- ½ cup whole wheat flour
- ½ cup ground flax seed
- 2 tsp baking powder
- 2 tsp garlic powder
- 1 tsp onion powder
- 2 tsp sea salt
- ½ tsp black pepper
- Optional: 2 scoops Perfect Supplements hydrolyzed collagen

- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 8 oz shredded cheddar (1½ cups), divided
- 1–2 cups broccoli, finely chopped
Instructions

If you're making the sausage from scratch, combine the ground meat with the salt, pepper, thyme, garlic powder, smoked paprika, sage, nutmeg, and sweetener. Mix just until evenly blended. (Skip this step if you're using store-bought breakfast sausage.)
- 1 lb ground chicken, pork, or turkey
- 1½ tsp salt · ¾ tsp black pepper
- 1 tsp thyme · 2 tsp garlic powder

- Preheat oven to 400°F and line a sheet pan with parchment.

Heat the olive oil in a large skillet over medium heat. Add the diced onion and the breakfast sausage and cook as is, breaking the sausage up, for 8–10 minutes until the onion is soft and the sausage is fully cooked through. Remove from heat and let cool 10 minutes — this matters, or you'll scramble the eggs in the next step.

- 1 lb breakfast sausage (from above, or store-bought)

In a large bowl, whisk the eggs and buttermilk together. Stir in 1 cup of the cheddar, the cottage cheese, and the cooled sausage mixture.

In a separate bowl, whisk together the dry ingredients — this is where the seasonings and collagen go.
- 1½ cups all-purpose flour

Add the dry mixture to the wet and fold gently until just combined, then fold in the raw broccoli — don't overmix or the biscuits will be tough.

Shape the biscuits one of two ways. For round biscuits, scoop even portions onto the prepared sheet pan, leaving space between each, and gently press the tops to flatten slightly. For squares, turn the dough out onto a floured surface, press it into a rectangle about an inch thick, cut it into squares, and place them on the pan. Either way, you'll get 12–24 depending on the size you like. Sprinkle the tops with the remaining cheddar.
- Remaining ½ cup shredded cheddar
- Bake 13–15 minutes, until the tops are golden and the centers are set. Let cool a few minutes before serving.
Notes & Storage
- Refrigerator: store in an airtight container up to 4 days.
- Freezer: freeze flat on a sheet pan, then transfer to a zip-top bag. Keeps up to 3 months.
- Reheat: 5–6 minutes in a 325°F oven or air fryer from the fridge; 10–12 minutes from frozen. Microwave works in a pinch (1–2 minutes).
- Biscuit size: a large scoop yields about 12 hearty biscuits; a smaller scoop gets you closer to 24 snack-sized ones. Adjust the bake time down a couple of minutes for the smaller size.
- Store-bought shortcut: skip the homemade sausage and use 1 lb of your favorite breakfast sausage — the dry-mix seasonings carry plenty of flavor on their own.
- Make it gluten-free: swap the whole wheat and all-purpose flour for 1½ cups blanched almond flour and ⅓ cup coconut flour (Jenn's original ratios).
